Lila Gamay is solar energy - expansive, glittering, and joyful. It is the first, fresh taste of the 2021 vintage, and it is bursting with bright fruit flavors and refreshingly crisp acidity. For Carbonic Gamay Project #2, the maceration time was cut to just 10 days before pressing, ensuring that the wine remained light and vibrant while still extracting texture and flavor. As always, native yeast and minimal intervention. Pairs well with charcuterie, gazpacho, summer picnics, and lawn games. Serve 45°-55°F.
